Mission Wheat and White Deli Wrap

75g drained tinned Puy lentils with 1/2 tsp concentrated vegetable stock added

40g frozen soya beans

1/4 an apple (Pink Lady or Cox), finely diced

1tsp extra virgin olive oil

15 fresh mint leaves, washed and finely chopped

Zest of 1/4 lemon

1/2 - 1tsp lemon juice

Black pepper to season

Step 1
Firstly, place the frozen soya beans in a pan of boiling water and cook for 3 minutes.

Meanwhile, peel and finely dice the apple before placing it into a mixing bowl. When the soya beans are cooked, drain them and add to the bowl along with the cooked lentils.

Add the remaining ingredients and stir well until mixed. To serve, pop the mixture into wraps and fold them up tightly.

Chefs top tip swap the apple for a couple of tablespoons of pomegranate seeds to give the wraps a fruity kick.
