½ cucumber, halved and deseeded

150g Greek yogurt

1 small garlic clove, crushed

Handful of chopped mint leaves

Step 1
Coarsely grate the cucumber then squeeze out all the liquid, discarding the liquid.

Add a pinch of salt, the grated cucumber, yogurt, garlic and mint into a medium sized bowl and mix well

Serve to dip or spread!
